People sometimes ask how decaffeinated coffee beans - is there a less natural caffeine from beans grown or decaffeinated coffee is somehow chemically stripped of its caffeine? In some cases, the answer is "no." There has been a decaffeinated variety of techniques used over the years, some of whom made use of natural or chemical solvents which left little or no residue in the beans themselves. Since some of these solvents chemicals were later determined to be carcinogenic, only a handful of decaffeination methods in use today.
The most obvious option is decaffeinated water - however, water alone can not be used because it absorbs many of the substances in coffee that offers a rich flavor and aroma. Because of this, in most cases a chemical solvent such as ethyl acetate (found in small amounts in fruit) or methylene chloride is used to extract caffeine from the water and the water was brought back to dried beans and, returning to enhance the flavor compounds for the 96-98% decaffeinated beans. These processes are guaranteed to leave no more than the limit Legal solvent (typically under 10 parts per million) and are certified by the Food and Drug Administration U.S. to be safe for human consumption.
Some health-conscious coffee drinkers cringe at the idea of any chemical solvent used in coffee, either naturally derived or not. For these people, not the Swiss water method of decaffeination, in which the grains are soaked in hot water, and then the water is run through filters (such as activated charcoal or coal) to strip the caffeine. The water is returned to the beans before the beans are dried, returning some but not all the flavor and aroma of grains. This method is considered more environmentally friendly, and decaffeinated coffee drinkers many refuse to accept otherwise processed grains. However, given the reduction of taste, not ideal for many coffee lovers.
The last, and some would say the best, of these three options involves the use of liquid compressed carbon dioxide instead of water as a solvent - the liquid CO2 is pumped into the beans after a light-water soaking, then drain the beans. Because of its molecular characteristics, CO2 is capable of absorbing the caffeine, leaving behind flavor components in coffee. This method is generally considered the most environmentally friendly and offers the most flavorful decaffeinated coffee with absolutely zero chemical residues remaining in the final product.
